Do you love the home fries from your favourite local diner but can't recreate them at home?
Gone are the days you need to eat in to get these tasty tots.
– 1 ½ lbs Russet Potatoes
– 2 tablespoons Bacon Fat
– 2 tablespoons Butter
– 1 Onion
– 1 Shallot
– 1 teaspoon Garlic Powder
– 1 teaspoon Smoked Paprika
– ½ teaspoom Onion Powder
– Salt to taste
– Pepper to taste
The best potatoes for home fries are high in starch.
Russets, Yukon Gold or Idaho are the best choices
Scrub potatoes and cut into 1/2 inch pieces.
Do not peel.
Place potatoes in cold water and bring to a boil for 2-3 minutes. Drain & allow to cool for 5 minutes.
Chop your shallots and onions and cook them in a cast iron pan over medium heat with 1 tbsp of bacon fat. Cook for 5 minutes or until translucent.
In the same pan, add 1 tbsp of butter & 1 tbsp of oil with the potatoes in a single layer. Cook the potatoes for 10 minutes without stirring.
Add the spices to the potatoes and stir to fully combine. Cook for another 2-3 minutes until done to the desired texture and brownness.
