Do you love the home fries from your favourite local diner but can't recreate them at home?

Gone are the days you need to eat in to get these tasty tots.

Ingredients

– 1 ½ lbs Russet Potatoes  – 2 tablespoons Bacon Fat – 2 tablespoons Butter – 1 Onion – 1 Shallot – 1 teaspoon Garlic Powder – 1 teaspoon Smoked Paprika – ½ teaspoom Onion Powder – Salt to taste – Pepper to taste

Choosing Potatoes

The best potatoes for home fries are high in starch. Russets, Yukon Gold or Idaho are the best choices

Step 1:

Scrub potatoes and cut into 1/2 inch pieces. Do not peel.

Step 2:

Place potatoes in cold water and bring to a boil for 2-3 minutes. Drain & allow to cool for 5 minutes.

Step 3:

Chop your shallots and onions and cook them in a cast iron pan over medium heat with 1 tbsp of bacon fat. Cook for 5 minutes or until translucent.

Step 4:

In the same pan, add 1 tbsp of butter & 1 tbsp of oil with the potatoes in a single layer. Cook the potatoes for 10 minutes without stirring.

Step 5:

Add the spices to the potatoes and stir to fully combine. Cook for another 2-3 minutes until done to the desired texture and brownness. 

Serve Immediately
