If you have whole eggs, separate the yolk from the white. If you have a carton of egg whites, measure out 2 tablespoons of liquid egg whites. In a stand mixer on medium-high speed, mix egg whites until they form soft peaks. This should take 2-3 minutes. While the mixer is running, add in the sugar a little at a time until the mixture forms medium peaks. An additional minute.
After the whites are the texture you want them, add in the matcha a little at a time. The match powder is heavy and if you add it all at once, it may weigh down the fluffiness of the whipped egg whites. Continue mixing an additional minute or until desired texture has been reached.
For an iced dalgona matcha latte: place 3-4 ice cubes in a glass topped with ½ - ¾ cups of milk of choice. Top with the whipped matcha and enjoy immediately.
For a hot dalgona matcha latte: heat milk of choice in a microwave safe mug for 30 second intervals until the desired temperature has been reached. Optionally froth milk with a milk frother. Top with whipped matcha. Serve immediately.
If your egg whites won't set make sure that you have absolutely no egg yolk in the mixing bowl. Also make sure the bowl is clean, dry and that you don't add the sugar until the whites are at least at a soft peak. Add in both the sugar and the matcha in little quantities at a time to ensure that you don't deflate your dalgona matcha latte base.
