For Soft Serve
If you're using fresh mangoes and bananas, cut them into ½ inch pieces and freeze them on a lined sheet tray for at least 5 hours. I like to use pre-frozen fruit for speed and convienece.
In a high-powered blender like a Vitamix, add all of your frozen ingredients and blend on high power, using the tamper as necessary to push the ingredients into the blades. If the mixture won't blend, add a tablespoon of coconut milk at a time until your blender or food processor can handle the blending. Keep blending and tampering until the mixture is completely smooth.
If you want soft serve nice cream, it's ready to eat now - enjoy!
For Scoop Ice Cream
Place your nice cream into a loaf pan and place in the freezer for at least 2 hours to harden. Once ready to eat, scoop out the nice cream into bowls and serve immediately.
If you want a bit of a change, sprinkle a small amount of table salt on your nice cream to balance the sweetness.
