Mango Nice Cream

With only 3 ingredients (and salt), this healthy dessert comes together in minutes. It's the perfect amount of sweet without being heavy for a fuss-free snack.

Equipment

  • High Powered Blender (or Food Processor)

Ingredients

  • 3 cups mango frozen
  • 2 bananas frozen
  • ¼ cup coconut milk full fat
  • table salt to taste (optional)

Instructions

For Soft Serve

  • If you're using fresh mangoes and bananas, cut them into ½ inch pieces and freeze them on a lined sheet tray for at least 5 hours. I like to use pre-frozen fruit for speed and convienece.
  • In a high-powered blender like a Vitamix, add all of your frozen ingredients and blend on high power, using the tamper as necessary to push the ingredients into the blades. If the mixture won't blend, add a tablespoon of coconut milk at a time until your blender or food processor can handle the blending. Keep blending and tampering until the mixture is completely smooth.
  • If you want soft serve nice cream, it's ready to eat now - enjoy!

For Scoop Ice Cream

  • Place your nice cream into a loaf pan and place in the freezer for at least 2 hours to harden. Once ready to eat, scoop out the nice cream into bowls and serve immediately.
  • If you want a bit of a change, sprinkle a small amount of table salt on your nice cream to balance the sweetness.
