Ingredients

  • ¾ cups Whipping Cream note
  • ½ cup 2% milk note
  • 6 pumps Vanilla Simple Syrup 6 tablespoons

Instructions

  • Combine all ingredients in a mason jar and stir to combine. This is sweet cream and it stays good in the fridge for up to 5 days. To make sweet cream cold foam, choose one of the methods below.

French Press

  • This is my favourite method! Take 3-4 tablespoons of sweet cream and add it to your French Press. Pump the French Press until the sweet cream has doubled in size and looks like melted ice cream.

Mason Jar

  • Place a mason jar in the freezer for 10-15 minutes before you want your coffee. Place 3-4 tablespoons of sweet cream and add it to the cold mason jar. Shake the jar vigorously until the mixture has thickened and resembles melted ice cream.

Milk Frother

  • Add 3 tablespoons of the sweet cream to a small glass. Whip with the milk frother until the sweet cream resembles melted ice cream and has doubled in size. Do not use a steam wand as it will heat the mixture. You want the sweet cream cold foam to be cold.

Bulk Batch (Blender)

  • If you're making a large batch of cold foam, place the entire batch into a high powered blender and blend until doubled in size and until the mixture looks like melted ice cream.

Notes

Cream - only use whipping cream or heavy cream. Half and half will not yield the same texture.
Milk - the recipe calls for 2% milk. In a pinch, you can use 1% or whole milk but do not use skim.
Storage. If you use the bulk method, you can store your prepared cold foam in the fridge for up to three days. The cold foam is best served fresh so I prefer to make it fresh for each up of cold brew.
Servings. This recipe makes enough for about 6 cups of cold brew. It may yield more or less depending on how much you add to each cup. If you make the cold foam in a big batch, you'll want to top your coffee with about ¼ cup of cold foam.
