Does everyone remember the craze that dalgona coffee kicked off in early 2020? I loved how quick it was to make a latte without an espresso machine. After making tons of matcha lattes with a milk frother I fell in love with the simplicity of dalgona matcha lattes.
Made with only 4 ingredients, this is one of the easiest ways to get a matcha fix on a time crunch. It's just a bonus that it's super beautiful to look at.

(For 1 latte):
- 1 egg white (or 2 tablespoons of aquafaba / liquid egg whites)
- 1 tablespoon white sugar
- 1 teaspoon matcha powder
- Β½ - ΒΎ cups milk of choice
If you want to make more than one serving (which I always do) double, triple or quadrouple the ingredients.
Substitutions and Diet Modifications
If you don't have or don't want to use egg whites, you can replace it in equal parts with aquafaba. Aquafaba is the liquid left in the cans of chickpeas. Alternatively, if you cook chickpeas in a pressure cooker from dry, you can make your own aquafaba.
As for the white sugar any sweetener (or artificial sweetener) can be used in it's place. I personally prefer sweeteners with a granule versus liquid. They add more height to the whipped dalgona matcha latte.
How can I make a vegan dalgona matcha latte? To make this latte vegan, substitute your egg whites for aquafaba and use a plant based milk. My favourite is Silk soy milk. Make sure your sugar is vegan friendly (some are not).
Can I make a keto dalgona matcha latte? Yes! Matcha is pretty low in carbs. The biggest problems will be the carb content of milk or plant milks. You can either use half and half or use coconut cream instead of milk. You may also add in some butter, cocoa butter or cream to raise the fat content.

- If you have whole eggs, separate the yolk from the white. If you have a carton of egg whites, measure out 2 tablespoons of liquid egg whites. Bonus! If you use cartons of egg whites, here are tons of uses for leftover egg whites.
- In a stand mixer on medium-high speed, mix egg whites until they form soft peaks. This should take 2-3 minutes.
- While the mixer is running, add in the sugar a little at a time until the mixture forms medium peaks. An additional minute.
- After the whites are the texture you want them, add in the matcha a little at a time. The match powder is heavy and if you add it all at once, it may weigh down the fluffiness of the whipped egg whites. Continue mixing an additional minute or until desired texture has been reached.
- For an iced dalgona matcha latte: place 3-4 ice cubes in a glass topped with Β½ - ΒΎ cups of milk of choice. Top with the whipped matcha and enjoy immediately.
- For a hot dalgona matcha latte: heat milk of choice in a microwave safe mug for 30 second intervals until the desired temperature has been reached. Optionally froth milk with a milk frother. Top with whipped matcha. Serve immediately.
FAQ
What matcha powder should I use? My personal favorite is the Ceremonial Matcha from David's Tea. It's a bit expensive but I bought an 100g container almost a year ago and I still have a fair amount left. I drink matcha a few times a week. Alternatively, you can use your favorite matcha powder but avoid sweetened or diluted blends.
Is it safe to eat egg whites? For the most part, yes. If you buy fresh eggs they are relatively safe. If you're worried, however, buy cartons of egg whites because they are always pasteurized.
What flavor syrups go good with matcha? Personally I love lavender with matcha. A local cafe called Just Us Coffee has an amazing matcha latte so now I always have homemade lavender syrup on hand. Other flavors that work well are vanilla, coconut, lemon or rose.
Do I need a stand mixer for this recipe? Nope! You can use a hand mixer or even a whisk if you want a workout. I just like using the stand mixer because of how hands-off it is.
Why isn't my matcha as dark as yours? I use really good quality matcha. Regardless of the quality, if you use different brands it may be a different color. Also, though not much, all of my photos are slightly edited to be more true to life.
Other Tips
I'm using aquafaba and can't get stiff peaks. What can I do? If your aquafaba won't stiffen, before adding in the matcha or sugar, add in about ΒΌ teaspoon of cream of tartar.
I bought a carton of egg whites for this recipe, what else can I do with them? I've compiled a list of some of my favorite egg white recipes. Keep in mind, 1 egg white is equal to about 2 tablespoons of liquid egg white.
If you want to make this matcha in larger batches you can either rewhip it on the day of consumption, or you can just mix it with milk to have a regular tasting latte without the glamour of the whipped matcha. It stores in the fridge for up to 5 days. In order to make a larger batch, double, triple or quadruple the ingredients in equal parts.
If your egg whites won't set make sure that you have absolutely no egg yolk in the mixing bowl. Also make sure the bowl is clean, dry and that you don't add the sugar until the whites are at least at a soft peak. Add in both the sugar and the matcha in little quantities at a time to ensure that you don't deflate your dalgona matcha latte base.
