    What Can I Do With Leftover Egg Whites?

    So you've made a mayonnaise, hollandaise sauce or ice cream and find yourself left with egg whites. Maybe you buy 3 cartons of egg whites at a time from Costco and can only make so many egg white omelets.

    No matter how you got here, you've found yourself asking "what can I do with leftover egg whites?" and I'm here to give you all the ideas you need and then some. If you need uses for the yolks check out my guide on using up egg yolks!

    What Can I Use Instead of Egg Whites?

    The best substitute for egg whites is Aquafaba. Aquafaba is the liquid left over from canned chickpeas and you need 3 tablespoons of it to equal 1 egg white.

    There are many substitutes for whole eggs, but the best replacement by far for recipes that call for egg whites only is aquafaba.

    General Ideas to Use Egg Whites

    • If you don't feel like cooking, you can freeze egg whites in either a clean mason jar or in 1 tablespoon allotments in ice cube trays.
    • Use egg whites as an egg wash on baked goods as a browning agent.
    • Use egg whites to purify broths and stocks - see the consomme recipe below.
    • Any breakfast recipes using eggs can be made with just egg whites. Quiche, frittata, omelets, scrambled eggs - the list is endless.
