    When you're craving a sweet treat to end your day but want something fresh and light, there's nothing better than a refreshing bowl of mango "nice cream".

    Mango nice cream is made with just 4 ingredients and a high powered blender. This recipe is naturally vegan, free of added sugars and gluten-free.

    Nice cream is essentially just frozen bananas blended with some kind of liquid and desired add ins. It's easy, cheap and great to satisfy sweet cravings.

    Why You'll Love This Recipe

    Easy. With only 3 ingredients + salt, this recipe is one of the easiest ways to whip up a quick dessert with almost no effort.

    Healthy. This recipe is naturally vegan, gluten-free and contains no added sugars. It's the perfect snack or dessert that still feels luxurious.

    Simple clean up. This recipe only makes one dish (your blender or food processor) so it's super easy come time to do the dishes.

    Ingredients

    Frozen Mango. The mango needs to be frozen. You can use cubed pre-frozen mango or cut and freeze fresh mango. Either works the same so I recommend saving money and buying bagged frozen mango.

    Frozen Banana. I like to cut the banana into slices before freezing to ensure even and fast blending, but if you have a high powered blender, you can put the banana in whole.

    Coconut Milk. Make sure you're using canned full fat coconut milk. Do not use light or low fat coconut milk.

    Salt. The salt balances out the sweetness. I recommend regular table salt.

    How to Make This Recipe

    For Soft Serve

    If you're using fresh mangoes and bananas, cut them into ½ inch pieces and freeze them on a lined sheet tray for at least 5 hours. I like to use pre-frozen fruit for speed and convienece. 

    1. In a high-powered blender like a Vitamix, add all of your frozen ingredients and blend on high power, using the tamper as necessary to push the ingredients into the blades. If the mixture won't blend, add a tablespoon of coconut milk at a time until your blender or food processor can handle the blending. Keep blending and tampering until the mixture is completely smooth.
    2. If you want soft serve nice cream, it's ready to eat now - enjoy!

    For Scoop Ice Cream

    1. Follow the same steps as soft serve.
    2. Place your nice cream into a loaf pan and chill in the freezer for at least 2 hours to harden. Once ready to eat, scoop out the nice cream into bowls and serve immediately.

    Tips to Make This Perfectly

    In order to make this recipe in a blender, you need a very high performance model with a tamper (like a Vitamix). If your blender isn't powerful enough, you can also make your ice cream in the bowl of a food processor.

    Make sure to use full fat coconut milk. If you use coconut milk that is low fat, the final product will be too watery and may crystallize if frozen into scoopable ice cream.

    • ¼ cup coconut milk full fat
    • table salt to taste (optional)

    Instructions

    For Soft Serve
